Banana Peanut Butter “Pancakes”

These “pancakes” are delicious and full of protein, vitamins, and good fat. The key to having them turn out right…picking a ripe banana and making the pancakes small (think of a silver dollar pancake). Any easy way to measure that out is to use a teaspoon for the “batter.” If you enjoy these, play around with using different nut butters…or with adding flavors like cinnamon or vanilla.

Ingredients
  • 1 egg
  • Half a ripe banana
  • 2 tablespoons of peanut butter
Directions
  • Mash up the banana until it is nice and soft
  • Add in egg and peanut butter or nut butter and mix thoroughly
  • Hit a frying pan and cover in cooking spray
  • Add dollops of mixture and cook to desired consistency
  • Serve and enjoy!
