Chicken & Bok-Choy Stir-Fry
Ingredients
1 pound (16 oz) Chicken Breast, boneless & skinless
1 head Bok Choy
2 large Carrots
5 Green Onions
1 tsp Light Sesame Oil
1 Tbsp Honey
1/2 tsp Ginger, grated
1 Tbsp Garlic, minced
2 Tbsp Soy Sauce, Low Sodium
1 Tbsp Rice Wine Vinegar
Directions
1. Combine honey, ginger, garlic, soy sauce and vinegar in a bowl. Set aside.
2. Cut chicken into 1 inch chunks. Cut Bok Choy into 1 inch strips. Dice green onions. Grate carrots.
3. Heat sesame oil in a large wok or skillet over medium-high heat.
4. Add in chicken and cook for 5-7 minutes. Add in bok choy, carrots, and green onions. Stir
continuously for 3-4 minutes and then add sauce prepared in step 1.
5. Cook and stir for an additional 2 minutes, or until the sauce has coated the chicken and vegetables.
