Easy Vegetable Frittata

A frittata is an egg-based dish (similar to a quiche or a pie) but without the crust. Eggs are a great source of protein, and the dish can be quite a diverse way to eat many different ingredients. While this recipe is focused on some of the green vegetables, experiment with throwing in different vegetables or trying different chesses. You can also make frittatas with additional sources of protein, such as chicken or shrimp. So, once you’ve made these recipe, get creative and make your own culinary masterpiece.

Ingredients
  • 3 large eggs
  • 1 tablespoons or light butter, margarine, or ghee
  • 2 ounces of goat cheese (or grated cheese of your choice)
  • 1 cups of cut vegetables of your choice: try broccoli, zucchini, and peppers.  Remember to cut vegetables to similar sizes so that they bake consistently
  • 1.5 tablespoons of milk or water
  • Salt and pepper
Directions
  • Pre-heat the oven to 400 degrees
  • Cover baking dish with cooking spray
  • Scramble eggs using a whisk (or a fork) and add in other ingredients, making sure to distribute the vegetables and cheese consistently throughout the dish
  • Pour the mixture into the baking dish and cook for 35 minutes
  • Sprinkle additional cheese on top if desired and serve
