Mediterranean Ground Chicken with Tzatziki

Ingredients

1 pound (16 oz) round Chicken Breast (97% Lean)
3 large Cucumbers
1 cup Greek Yogurt, 0% Plain
1 Tbsp Red Wine Vinegar
1 Tbsp Olive Oil
1 Tbsp Fresh Dill
1 Tbsp Garlic, minced
1/4 tsp Salt
1/4 tsp Pepper
1/4 tsp Onion Powder
1/2 tsp Dried Oregano

Directions

1. Heat a nonstick pan over medium high heat.

2. Add ground chicken and saute for 5 minutes, breaking it apart as it cooks. Stir in onion powder and oregano. Continue to cook and break apart ground chicken until no pink color remains

3. Peel cucumbers then finely shred with a cheese grater. Set cucumbers aside.

4. Make Tzatziki. Combine remaining ingredients into a separate bowl. Add 1/3 of shredded cucumbers into the bowl.

5. Divide remaining shredded cucumber into 5 bowls. Top with 3 oz ground chicken and 1/5 tzatziki sauce.
