Tuna Poke Bowl

Ingredients

4 oz Ahi Tuna
1/2 cup Edamame, shelled
2/3 cup Brown Rice, Cooked
1/2 medium Avocado
1 small Cucumber
1/2 cup Carrots, shredded
to taste Fresh Cilantro
to taste Pickled Red Onions

Directions

1. Cook rice

2. Peel and dice cucumber.

3. Peel, pit and cube avocado.

4. Cube Ahi Tuna (Consume raw fish at your own risk, if you would like to cook your tuna, cube and then sear
for 2 minutes per side in a non-stick skillet.)

5. Divide all ingredients in half and assemble your bowl. OPTIONAL: Top with 1-2 tsp fresh cilantro and 1-2
tsp pickled red onions
